Arugula & Pear Salad With Maple Vinaigrette
  • 1 tbps maple syrup
  • 1 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • ¼ tsp salt
  • black pepper, to taste
  • 2 tbsp olive oil
  • 6 oz baby arugula leaves, rinsed & patted dry
  • 1 pear, cored & thinly sliced
  • ½ cup blue cheese, crumbled

In a small bowl, mix maple syrup, mustard, vinegar, salt & pepper.  Whisk in olive oil & set aside.  Arrange arugula on individual plates and top with pear & blue cheese.  Drizzle with the vinaigrette.

Serves 3 to 4
