Japanese Somen Noodle Salad

Recipe from the Wyllie Fox Farm Kitchen

3 bundles somen noodles
2 tbsp vegetable oil
¼ cup seasoned rice vinegar
2 tbsp soy sauce
1 tbsp freshly grated ginger
3 scallions, greens & whites, sliced thin
3 large carrots, coarsely grated
1 red bell pepper, thinly sliced

Cook some noodles according to package bad allow to cool.  Combine oil, rice vinegar, soy sauce, ginger & scallions in a large bowl & mix well.  Add carrots, pepper & noodles and mix gently.

Serves 4
