Japanese Somen Noodle Salad
  • 3 bundles somen noodles
  • 2 tbsp vegetable oil
  • ¼ cup seasoned rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp freshly grated ginger
  • 3 scallions, greens & whites, sliced thin
  • 3 large carrots, coarsely grated
  • 1 red bell pepper, thinly sliced

Cook some noodles according to package and allow to cool.  Combine oil, rice vinegar, soy sauce, ginger & scallions in a large bowl & mix well.  Add carrots, pepper & noodles and mix gently.

Serves 4
