Rigatoni with Vodka Sauce
  • 6 tbsp butter
  • 3-4 cloves garlic, crushed
  • 4 oz proscuitto, cut into small pieces (optional)
  • 1 28-oz can diced tomatoes, liquid reserved
  • 1 28-oz can tomato sauce
  • 1 container heavy cream
  • ¼ cup vodka
  • ¼ cup chopped basil
  • ¼ cup chopped parsley
  • 1 tsp oregano
  • 16 oz. box rigatoni

Melt butter in a large saucepan, then add garlic & proscuitto & sauté until fragrant, approx 1-2 minutes.  Add tomatoes, including liquid & sauce and simmer for 20 minutes.  Add herbs, vodka & cream and simmer another 20 minutes.

Meanwhile bring a large pot of salted water to boil and cook rigatoni per package instructions.

Serve sauce over rigatoni.
