Roasted Tofu with Almonds & Green Beans
  • 3 tbsp peanut oil or olive oil
  • 2 tbsp toasted sesame oil
  • 3 tbsp soy sauce
  • 1 box firm tofu, drained cut into 1” cubes & patted dry
  • 2 tbsp grated ginger
  • 2 cloves garlic, crushed
  • 1 pound green beans, ends removed
  • ½ cup almonds, toasted in 350° oven for 10 minute

Mix oils, soy sauce & garlic in a large bowl.  Gently toss tofu cubes in mixture and allow to marinate for 1-2 hours.  Place tofu cubes on a baking sheet (reserve the remaining marinade) and bake in a 400° oven for approx. 30-40 minutes, until crispy on the outside, turning twice during baking.

Meanwhile, drop the green beans in rapidly boiling salted water and cook for 2-3 minutes, until bright green, but not limp.  Plunge in cold water to stop cooking, then drain.

Stir the grated ginger into the remaining marinade, then add the baked tofu, green beans & toasted almonds.  Mix gently & serve.
