Tofu-Veggie Kebobs w/ Lemon-Soy Marinade

Recipe from the Wyllie Fox Farm Kitchen

Marinade:              ½ cup peanut or vegetable oil
                                3 tbsp lemon juice
                                4 ½ tbsp soy sauce
                                2 ½ tbsp toasted sesame oil
                                1 scallion, very thinly sliced
                                3 cloves garlic, crushed
                                1 tbsp fresh grated ginger

1 package firm tofu, drained & patted dry
1 8-oz package mushrooms, cleaned
1 zucchini, cut into ½” slices
1 bell pepper, cut into 1” x 2” pieces
1 red onion, cut into wedges

Combine marinade ingredients in a large bowl & mix well.  Dice tofu into 1” cubes.  Add tofu & vegetables to bowl and toss gently; allow to marinate for 1-8 hours.  Arrange tofu & vegetables on skewers & grill over medium heat until done.
