Tofu-Veggie Kebobs w/ Lemon-Soy Marinade

   Marinade:

  • ½ cup peanut or vegetable oil
  • 3 tbsp lemon juice
  • 4 ½ tbsp soy sauce
  • 2 ½ tbsp toasted sesame oil
  • 1 scallion, very thinly sliced
  • 3 cloves garlic, crushed
  • 1 tbsp fresh grated ginger 

  • 1 package firm tofu, drained & patted dry
  • 1 8-oz package mushrooms, cleaned
  • 1 zucchini, cut into ½” slices
  • 1 bell pepper, cut into 1” x 2” pieces
  • 1 red onion, cut into wedges

Combine marinade ingredients in a large bowl & mix well.  Dice tofu into 1” cubes.  Add tofu & vegetables to bowl and toss gently; allow to marinate for 1-8 hours.  Arrange tofu & vegetables on skewers & grill over medium heat until done.
